Flavor Profile - Moderated brine, sweet , soft meats and a lingering stone finish. This oyster has the luxury of being raised in deep waters with a rapid tidal flow, allowing them to grow quickly in long line cages.

Flavor Profile - There is a light airy sweetness to this lovely oyster. There is an ivory meat with a crisp sublime bite of natural sugars that finishes with a hint of tin.
